RECIPE: Waldorf Salad with a Twist

I had never tried a Waldorf salad before. It’s a classic but because I’m allergic to walnuts, it isn’t something I would ever order. So I came up with a Waldorf salad – with a twist! I’m not allergic to pine nuts so I often use them as a substitute, and that’s exactly what I did to create this delicious salad. It is such a tasty salad and it could not be easier to make!

Ingredients

for 2 people

1 red apple, sliced

2 celery sticks, chopped

50g red seedless grapes, halved

50g toasted pine nuts

1 little gem lettuce, chopped

2 tbsp mayonnaise

salt & pepper to season

 

Method

1. Put the sliced red apple, sliced red grapes and chopped celery into a bowl and mix with the mayonnaise.  Season to taste with salt and pepper.

2. Pile the chopped lettuce onto plates, and top with the grape, celery and apple mix.

3. Sprinkle the toasted pine nuts over the salad.

4. Serve and enjoy with some crusty bread!
