Weekly Meal Planner #4

Welcome to another look at what’s on the menu for my family this week. As always we have pizza on the menu! Also I am vegetarian, although Ian eats fish, so it’s pretty much a vegetarian meal plan. You can always change the main ingredient to a meat option if you prefer, such as using pork sausages instead of vegetarian sausages!

 

This week is very pasta based as I’m trying a few of the recipes from the last issue of Waitrose Kitchen magazine. I love this magazine and always get lots of inspiration from it.  And we’re having the last BBQ of the summer, seeing as the weather has turned cold already!

WEEKLY MEAL PLANNER #4

1. BBQ 

(sea bass for Ian, plus Quorn burgers, veggie sausages, halloumi, corn on the cob & salad)

 

2. Conchiglie con gli spinaci 

(pasta shells, ricotta, cream & lemon zest sauce, wilted spinach with butter & shallots)

 

3. Homemade gnocchi with sage & butter sauce

 

4.Mushroom fried noodles

(mushrooms sautéed with garlic, ginger & onion, fried egg noodles, tossed in soy sauce & spring onions)

 

5. Spaghetti with slow roasted baby plum tomatoes, mozzarella and basil

 

6. Mexican-style rice & beans with salsa

(Brown rice cooked with tomatoes, green beans, kidney beans, carrots & onions. The salsa is made with avocado, red onion, red chilli and lime juices. All served on warm tortillas)

 

7. Pizza!

  1. Some great meal ideas there. I love reading other people's menu plans to help me get ideas. The Mexican beans and rice is going on my next week's menu.
