Weekly Meal Planner #5

Welcome to another look at what’s on the menu for my family this week. As always we have pizza on the menu! I am vegetarian, although Ian eats fish, so it’s pretty much a vegetarian meal plan. You can always change the main ingredient to a meat option if you prefer, such as using lamb mince instead of vegetarian mince!

WEEKLY MEAL PLANNER #5

1. Spicy mince and rice
(Mince browned with Rogan Josh curry paste, mixed with green beans, spring onion, basmati rice & red chilli)

2. Baked mushrooms & salad
(Portabella mushrooms stuffed with mozzarella, garlic and breadcrumbs, with side salad)

3. Sicilian “sausage” pasta
(Instead of sausage meat I use soya mince. It’s cooked with fennel seeds, garlic, onions, red chilli, chopped tomatoes, a splash of soured cream, and stirred through pasta)

4. Warm bean & beetroot salad
(A bulgur wheat salad served with roasted beetroot, cucumber, thyme, black eyed peas and spinach)

5. Keralan veggie curry with rice & poppadums
(This recipe is from Jamie’s 15 Minute Meals)

6. Rigatoni with red pesto and roasted veg
(Blitz sundried tomatoes, pine nuts and parmesan to make the pesto, stir through roasted pepper, tenderstem broccoli and rigatoni pasta)

  1. Wow Sian this sounds delicious! I`ve saved for future meal inspiration. I`m not veggie but I prefer veggie mince to anything else and that first dish sounds amazing, I`d never think to mix mince and rice other than with a sauce like in a chilli but it sounds so good! As do the stuffed mushrooms and sausage pasta! xx
